Update.

Fear. Panic. Emptiness. Drained. Confused. These are some of the feelings that went through me when my life changed on August 1. My boyfriend got diagnosed with stage 4 lung cancer. It was very difficult to wrap my head around this. He’s very young and

Baby Spaghetti Bolognese

Baby Spaghetti Bolognese

Here is a simple recipe of Baby Spaghetti Bolognese that you can make while you prepare Bolognese for adults. We used the sauce in a pasta bake with grilled aubergine and lots of mozzarella and padano. Baby got this: Baby Spaghetti Bolognese, a small bowl

White Gold 2021

White Gold 2021

It’s spring and it’s the season of the white gold or the queen of vegetables as white asparagus is called here. We love it!

These two recipes are how we like to enjoy white asparagus. We also have a third way: with hollandaise sauce. Yummy!

This recipe I got from a Belgian guy during my Erasmus exchange in the Netherlands. He served it with home-made Belgian fries – so good!

Asparagus ‘the Flemmish’ way, 2 persons and baby

  • 500g white asparagus
  • 100g clarified butter
  • 1 bunch of curly or flat parsley (I used frozen this time, I would recommend fresh)
  • 4 eggs
  • pepper, nutmeg

Hard-boil the eggs. Prepare the asparagus: Peel them and cut off the ends, about 3-4 cm from the end. Save these for the next recipe! You can throw them in the freezer for another day or store them in the fridge for the next day. Heat up the butter gently and seperate the milk protein (the whitish substance that drop to the bottom of the pan) to make clarified butter. Chop the parsley. Boil the asparagus very gently for 5 minutes. Drain or save the liquid for stock. For our daughter I let one small top piece (the best piece of course) boil a bit longer. I then mashed it up with a fork. Chop up the eggs with an egg chopper (the recipe states to mash the eggs, I didn’t do that this time). Put the asparagus on a plate. Pile the eggs on top. Pour on the clarified butter. Season with pepper and nutmeg (optional – is nice when you mash the eggs to add). Enjoy with ham!

White gold and butter – yum!
The ham adds some extra saltiness.
For the baby we boiled a potato and made som mash to go with the mashed asparagus top. She enjoyed the asparagus more than the potato haha

White asparagus soup, 2 persons and baby

  • Leftover peel and ends of 500grams white asparagus
  • A small knob of margarine
  • 6 dl water
  • 1/2 bouillon cube or less (depends on taste)
  • about 2 tablespoons cream
  • pepper
  • For baby: about 40-50 ml breastmilk

Defrost the leftover asparagus if needed. Heat up a pot. Melt the margarine and fry the leftover asparagus for a few minutes. Add water. Boil for 20-25 minutes until the ends are very soft. Let it cool before you put the ends, the peel and the boiling liquid in the blender. Blend until smooth. Put a small amount in a different pot (this is for the baby). In the big pot, add the rest of the soup and add bouillon cube and let it boil gently until the bouillon cube is dissolved. Add cream. In the baby pot, add the breastmilk. Heat very gently on very low heat (or don’t heat it up at all, the milk I had was defrosted, so it was very cold). Serve with sandwiches or garlic bread. We added some ham in the soup for the adults. Delicious! Our daughter loved it 🙂

Soup is the best!
Asparagus soup for babies. This portion was too big, she only ate maybe 1/4 of this. One possibility could be to put this in a bottle, it’s very smooth and thin.

I wish the season for white gold was longer!

It’s so much fun to try to figure out how to serve our normal dishes to the baby. We do a mix of traditional puree-style introduction of food and baby-led weaning giving her bigger pieces of fruit or vegetables to get acquainted with and chew on. At 7 months though, the bulk is still mother’s milk.

Swedish and Dutch Easter food traditions

Swedish and Dutch Easter food traditions

Happy Easter everyone! Vrolijk Pasen allemaal! Glad pĂ„sk allihopa! The plan was that my parents would come this Easter to see their grandchild for the first time. She was born in October last year but because of corona my parents haven’t been able to visit

Jamaican Style Corn Meal Porridge

Jamaican Style Corn Meal Porridge

During the first wave of Corona in the Netherlands, there was at times difficulties in getting flour in the supermarkets. Because of this, I bought some corn meal at the Asian supermarket to experiment with (maybe not a very Asian ingredient, but in the Asian

Pulled chicken from the slow cooker

Pulled chicken from the slow cooker

Here comes a simple recipe with hardly any prepping or watching of the stove.

Ingredients

2 chicken thighs 1/2 onion, minced ketchup, enough to cover the chicken in the pot onion powder paprika powder a pinch of cayenne worchestershire sauce apple cider vinegar mustard sugar salt pepper

Clean the chicken if needed. Mince the onion. Mix in a bowl ketchup, onion powder, paprika powder, cayenne, worchestershire sauce, vinegar, mustard, sugar and salt. Maybe 1 teaspoon each of onion powder and paprika powder, but use your own tastebuds. I took too much mustard the first time, which was OK, but a bit heavy on it. Put the chicken, onion and sauce in the slow cooker and put it on high.

Chicken, onion and sauce waiting to be cooked
Put the slow cooker to high
Now all you have to do is wait, easy right?

Let it cook for 3 hours. This doesn’t give you that much pulled chicken, enough for two wraps. Increase the amounts for more.

The finished result – a deep flavour and tasty chicken!

Eet smakelijk! Smaklig mÄltid!

Kobe Curry

Kobe Curry

In november 2019 my fiancee and I went to Japan. We went from Tokyo to Hiroshima with multiple stops along the way. One of them was Kobe. Kobe is a cute relatively small Japanese city with lots of food options. And their own Manneke pis.

Swedish fish balls with curry sauce

Swedish fish balls with curry sauce

The first dinner from the weekly menu of Week 5 was Swedish fish balls with curry sauce. I’ve a very strained relationship with Swedish style fish balls. The only ones I tried was from a can and tasted…mhm…fishy and weird to be nice. They look

Menu of Week 5 2020

Menu of Week 5 2020

One thing I’m trying to do more often is to write a menu for the entire week and do all the grocery shopping on Sundays and only top up during or go to speciality shops like the Asian store during the week.

For this week, this is the plan:

  • Swedish fish balls with curry sauce and rice
  • Halloumi pasta
  • Hungarian sausage carbonara
  • Sausage Stroganoff with rice
  • Tofu and shitake mushroom in teriyaki sauce with rice
  • Chicken a la Kyushu
  • Chili from Öland
  • Vegetarian Kapsalon with Falafel

Another goal this year is to eat more vegetarian food and more fish. Week 5 contains 3 vegetarian dishes, so that’s quite OK, only one fish dish though.

For lunch, I’m thinking at least some leftovers, but I’m also planning to make big batches of rice and Korean banchan for bibimbap.

At the store we managed to find most of the ingredients, some are missing, so there will be more visits to the supermarket and Asian store (which I like to go to).

The resulting dishes will come soon!

My trip to Vietnam in (food)pictures – Hanoi

In january 2018 my boyfriend and I went to Vietnam for a month. We went from Hanoi down south, via Ha Long Bay, Danang, Hue, Hoi An, Nha Trang, Dalat, Mekong Delta and ending in Ho Chi Minh (Saigon). This is my impression of Hanoi,
